Ok. I know we all have our favorite things to do with the holiday leftovers - besides turn the turkey into sandwiches. So, how about sharing a few of your favorite things. Now, that puts me in mind of a song from Sound of Music. ~wanders off humming "My Favorite Things"~

MY GRANDMOTHER'S APPLE COBBLER

INGREDIENTS

1/2 bag of apples (depending on the size of the apples...about 6) you want the bottom of the cake pan covered.
1 tablespoon of sugar
1 tablespoon of cinnamon
1 stick of butter
3/4 cup of sugar
1 cup of flour
1 egg

heat oven to 350

1) Spray bottom of round cake pan with pam or other non stick spray
2) Peel and core apples...cut up into small pieces
3) Sprinkle the 1 tablespoon of sugar and cinnamon over the apples

In a bowl, put 3/4 cup of sugar and the cup of flour. Add the egg and melt the stick of butter and add that in there too. Mix it up, it will be very thick. You will scoop it out of the bowl and drop on top of the apples in the cake pan. I just use my fingers to spread it around on top of the apples. It doesn't have to be perfectly spread. As it cooks the batter drops down in between the apples.

Cook for approx 1 hour on 350. The top will be golden brown when done. I always use the toothpick trick to see if it's cooked through.

This makes a very sweet apple cobbler. I love to eat it with coffee ice cream on top 8)

Tasty recipes I must say. Not to mention leverpastej the Chief talks about. It's a common thing to have on you sandwich here. Especially tasty with pickled cucumber :)

And again, many thanks Chief for the recipes for iced coffee. Even though we had a rather rainy summer they came in handy. And now my girlfriend, who hates coffee (!), cant get enough :)

So Dusty - how about posting some of your favorite recipes so we can try them. I don't have all of my grandmother's recipes translated for myself. They had ended up with an Aunt who still read & spoke Danish but when she died she hadn't finished the translations for the rest of us. Some cousins & I are gradually putting them together from our mothers' versions of the recipes & what little we've translated so far.

Dusty - thank you - that would be fantastic. I'll collect them from my cousins & send them to you via PM. The other problem we're finding is my grandmother frequently used weights instead of the more typical cups, teaspoons and such for her measurements. Then again she was cooking for a family of 9 as well as any grandchildren wandering around and hired help that was receiving room and board as part of their pay. Let us say the dear lady was generally cooking for a small army at any given time. I have found an equivalency chart that is helping us reduce the recipes to more manageable quantities for smaller families.
